Today our chefs are cooking FIDEGUA. This is a traditional pasta based PAELLA.

Here is what you will need to cook along:

FOR THE FIDEGUA

Vermichelli pasta- 500 gr. - 17.5 Oz

Green Beans- 200 gr. - 7 Oz.

Green Peas- 200 gr. - 7 Oz.

Broad Beans- 200 gr. 7 Oz.

Green Pepper- 1

Garlic- 3 cloves

Chichen Breast- 250 gr. -9 Oz.

Butcher Sausages - 4

Tomato Sauce- 150 gr. - 5 Oz.

Chicken Broth- 1 L. - 4.5 Cups

Olive Oil

Salt

FOR THE ALI-OLI

Egg - 2

Olive Oil - 1/2 cup

Sun Flower Oil - 1/2 cup

Garlic -2 or 3 Cloves

Lemon - 1

Salt

Fran Glaria was born and raised in Pamplona, part of the Basque country in northern Spain.  His passions for history, art and food, led him to tour guiding. Over 20 years ago, he started a small local guiding company in his hometown. This company evolved into designing tours in the Basque region, and also into organizing tours for the Running of the Bulls festival in Pamplona.
