Cooking with Mum: Scottish Vanilla Tablets

The Scots are notorious for their sweet tooth but even for them this sugary confection is pushing the limits! Scottish tour guide Liz Lister introduces her mum, Betty Martin, who demonstrates how it’s made (see recipe below) while at the same time sharing some of her experiences of life under Covid Lockdown.


Betty Martin’s Recipe for Scrumptious Scottish Vanilla Tablets

Ingredients

2lb sugar

1/4lb butter

1 tin condensed milk

1 and 1/2 cup milk

Few drops of vanilla extract (optional)



Method

Put all the ingredients into a pan and bring to the boil, stirring continuously.

Keep stirring until setting point then beat with a wooden spoon or use electric mixer until the lines of the whisks stay when you draw them across the pan.

Pour the mixture into a lightly greased tray.

Leave to cool and as it begins to set use a knife  to mark into squares.

When completely cold, turn out and break into squares.
